Selected healthy horses aged 3-7 years old: forelegs, shoulder blades, neck, and sirloin, etc. Evisceration and segmentation are done by Chinese workers. The  cut shape is intact, with removing bone, and evisceration of lymph, oil, and fascia. Large block, no minced meat, tender meat.
